Batch B we left plain and flavored with 1/2 tbsp of sugar. We pulled it after 4 days but probably should have gone 3. It’s looking like we need 1-2 days for fruit and 2-3 days for plain, at least during the winter. Both our first and second fermentations are taking less time. We suspect this is due to hotter inside temps during the winter. Our current brewing method is to bring 8 cups of water to a boil, cover and remove from heat, allow to cool slowly to 195 degrees so that the bottom of the pan is not hotter than the water. We have started using only 14 grams of tea which is less Oolong than we’ve ever used. We steep the tea for 20 minutes, stirring once after 5.
